Time to move on...

The girls had a great Halloween- even though it wasn't technically on the 31st here in Columbus. I guess they find it exciting to confuse everyone. But the weather was great, so I can't complain! The girls loved their costumes. Olivia wore tall boots with heels and refused to sit or wear a coat. I know her feet were hurting and she needed a coat, but I also know she wanted everyone to see her costume.



These are the sweet friends we trick or treated with. We are going to miss having them right across the neighborhood!



We officially rented our house today. A wonderful family came by yesterday and decided this was the one. We are so thankful. We got the lease agreement and check today. The movers come in 9 days! It is so soon, but honestly I am glad. I worry about when and what needs to get done. My stomach has been so nervous feeling all day today. And I have almost cried at random things. Like while watching the Razorbacks today. They cameraman panned the crowd and people were calling the hogs and looked they were having so much fun. I could feel my eyes tearing up- not b/c I want to be there, but b/c I am emotional- apparently- today. So anyway, the fact that it is coming so soon is better. Hopefully we will find a house this week in our new home town in Fort Worth, TX. Yeehaw! I will miss our house so much. It is wonderful and has been more than a blessing to us. I will miss the wonderful friends we have made here. They mean so much b/c we were miserable here before we had them. I will miss Graeter's ice cream, the cool summers, the lack of bugs, the beautiful sky (this sky has the biggest, fluffiest clouds I have ever seen), and apple picking. I am thankful we got to go one last time. And that weekend was our favorite picking time- Goldrush! Yum! I am amazed at how much Travis and I have grown since we've lived here. We've been through some incredibly hard times, but God has used them to grow us so much closer to him and to each other. I wouldn't trade one minute of what we have been through for this. It has been so fun to watch the girls grow here too. I think that will be sad for me to leave. So much of their life has been here. Annika was only 6 months old when we moved here and now she is 3 1/2.

So, I will miss things about you OH. Not a lot of things, but the things I will miss will be hard to let go of. We'll be back, but we'll be wearin' boots when we return. :)

Olivia's 6th Birthday Party at Pink Bliss

Here are a few more pics from Olivia's birthday party. Pink Bliss was so fun! They got to make lip gloss, get their hair, make-up, and nails done, and dance around the store!


I loved the way these cookies turned out. I also made some lollipop cookies that were really cute. I got some sugar purses, hair brushes, make-up brushes, etc. from a baking store here in Columbus. I had to wrap them up like crazy, but they survived the plane. (I can say these are cute because the ones that I made for her horse party took twice as long and weren't as cute. Hmmm, pink and blue cute things v. brown horse shoe cookie. That's really no contest.)


Here are all the girls. Anna Kate LOVED it! She was so cute. She is only 2 and completely loved every minute!



This girl did some amazing teasing for Olivia. She had some BIG hair!



This is the best picture of their make-up. It was very glittery and fun! I am glad they could see it. Sometimes people are afraid to put make-up you can see on little girls and it just isn't as fun.



I cannot believe Olivia is 6. I can hardly even type it. She is the most precious little girl. God gave her the sweetest, most kind heart. She is the best big sister, helper, teacher, creator of unique crafts, reader (making up her own words without missing a beat), singer (making up songs without missing a beat), dancer, spinner, and amazing daughter. I feel guilty for treating her so much older than she is because it makes me expect more of her, but she always lives up to it- even at 2 1/2 when Annika came. I treated her like she was 5 and she acted like it. She is beautiful inside and out. She genuinely cares about others, which isn't very common for her age. (I can say all of these things because these are all things God gave her- not us!) She loves stuffed animals and always has room for one (or 5 more). She is fun to be with. An excellent shopper, and a great friend. She is also getting quite a sense of humor and really makes me laugh several times a day. I love, love, love this girl. I am so thankful to be her mama. God has blessed me so much with her (and her sweet sister).

Annika showing off her new Dora toothpaste. She was so excited about it. I think it was because I had told her we weren't getting a toy and she somehow felt like she got one anyway.


 
Olivia made wrapping paper just for fun for Annika. She always does the sweetest things for her. She wrapped a book in this cute paper after spending a while making it- all the while knowing Annika was going to rip it off. Very cute!

 

The girls LOVE the Wonder Place in Little Rock. They seriously asked to go everyday while we were there. We finally gave in. It was a great day to go- not many people there and it was free adult day!

Hair cut and Pinnacle

Annika got her hair chopped! It is so cute! I LOVE it! I think it is perfect for her precious face! The first picture is Annika pretending to be asleep in the St. Louis airport. She was probably really wishing she was asleep because it was late. The other pictures are from when we climbed Pinnacle with my mom. We had a great time! Annika was VERY scared of bugs (since she had gotten stung in the face by a yellow jacket a week before).

Cousins!

We went to AR for 4 weeks. We had a great time! We did so much while we were there and I kind of feel overwhelmed with what to post. So I will just do a little at a time. We got to spend sometime with Olivia and Annika's cousins while we were there. We LOVE them! I so wish we lived in the same town because they would be at our house all of the time! (or we'd be at their's because they just finished building a really great new house!) They are the sweetest girls (Andrew is great too!) and they had the best time together. They came over for Olivia's birthday. We went to Pink Bliss and had a sleepover at mom's. Olivia did not stop smiling. It was a dream birthday for her! Here are a few pics!

Olivia made me this picture while I was putting Annika to bed last night. She said it is her dancing. She drew her arm with a pencil and then kind of erased it to make it look like it was moving. Love it. She is way more creative than me!

Great Recipes!

Here are some great recipes for pizza, french toast, and bananas foster. Hope you enjoy them!
Handmade pizza dough
*** Make the night before! And use BREAD FLOUR***

1 package ACTIVE dry yeast
1 Cup warm water (100-110 degrees)
1 ¼ cups cold water
2 T olive oil
1 t sugar
1 ½ t salt
5 ½ cups (1 lb 10 oz) bread flour divided
cooking spray

1. Dissolve yeast in 1 cup warm water in a bowl; let stand 5 min. combine 1 ¼ cups cold water, oil, sugar, and salt in a small bowl; stir with a whisk.
2. Weigh or lightly spoon 1 lb 8.9 oz (5 ¼ cups) flour into a dry measuring cup and level with a knife. Combine flour, yeast mixture, and cold water mixture in bowl of a stand mixer fitted with dough hook. (if you don’t have a mixer, mix by hand) Mix on low for 8 min. or until dough begins to form. Let rest 2 min. Mix on low 6 minutes or until dough is smooth (if no mixer, knead by hand for 10 min., then go out and buy a mixer). Turn dough out onto a floured surface and knead until smooth and elastic (about 2 min.- I do all of that in the mixer, too). Add enough of the remaining flour 1 T at a time to prevent dough from sticking to hands (dough will feel sticky).
3. Divide dough in half, and place each portion in a large zip-top bag coated with cooking spray. Seal and chill overnight or up to 2 days. Let stand at room temp. for 1 hour before using.

*note- you can freeze the dough for up to 2 months. Thaw overnight in fridge before use.

Homemade Pizza Sauce

7 T water
2 T chopped fresh basil
1 ½ T olive oil
2 t dried oregano
1 ½ t sugar
1 t minced garlic
1 (14.5 oz) can petite cut diced tomatoes, undrained
1 (6 oz) can tomato paste

Mix all ingredients and voila you have the best sauce! If you prefer, you can puree it. Makes about 4 pizzas (two recipes of pizza dough)


Pizza

1. Sit out dough for 1 hour.
2. Preheat oven to 500 degrees.
3. Roll out dough. You really have to get tough with it. (if you are having trouble rolling it out, roll just a little and then let sit for 5 min. This is very helpful if you desire very thin pizza) Put on pizza pan ~ round kind with holes is a must!
4. Cover entire crust with olive oil; add sauce; parmesan cheese, mozzarella cheese (the fresh kind melts really well and is great if you mix shredded with it); toppings.
5. Bake at 500 degrees for about 12 minutes.

French Toast
Mix up custard mixture and sit out bread night before!

1 cup half and half
3 large eggs
2 T honey, warmed in microwave for 20 seconds
¼ t salt
8 (1/2 in.) slices day old French, Italian, brioche, or challah bread
4 T butter

1. Slice bread and sit out overnight. Whisk half and half, eggs, honey, and salt. Refrigerate overnight. (if you want to make it a little more decadent add ½ t vanilla and 2 T sugar J )
2. Preheat oven to 375. Dip bread into mixture and allow to soak for 30 seconds on each side.
3. Over medium heat, melt 1T butter in a 10 in. nonstick sauté pan. (A griddle works GREAT for this! I set mine to 375-400). Place 2 slices of bread and cook until golden brown. (you can cook all at once on griddle)
4. Remove from pan and place in oven for 5 minutes. Repeat with all slices.
5. Top with fruit, whipped cream, syrup, or bananas foster!

Banana Tarte Tatin*This is the most wonderful dessert and very easy to make. Super for company! And you can make just the banana part and use as toppings on ice cream or French toast. Can easily be halfed. *
1 sheet frozen puff pastry, thawed
6 T butter (you can cut some out)
¾ C packed light brown sugar
½ t cinnamon
1/8 t salt
5 large ripe bananas
1 t vanilla
2 T rum

1. Preheat oven to 400 (only if making whole dessert!) Roll out pastry to a 13 ½ in square (I never do this) Cut out a 12 in circle using a skillet as your guide. Put back in fridge to get firm. Make three ½ in. slits in the top of the pastry and set aside.
2. Melt butter over med. heat. Stir in sugar, cinnamon, and salt. Cook, swirling skillet occasionally, until mixture turns medium amber, about 3 min.
3. Arrange bananas in skillet, overlapping slightly. Cook, without stirring, 3 minutes. (careful not to get it too dark because it still has longer to cook) Drizzle vanilla and rum over bananas and cook until most of the rum has evaporated and liquid thickened, about 1 ½ min. Remove from heat.Place pastry round right on top of bananas and put in the oven. Bake until pastry is golden and puffed, about 25 min. Remove from oven and carefully invert tarte Tatin onto a serving plate. Then hide in your kitchen and eat the whole thing. Just claim it burned.
